Where to start? That was the hardest week I’ve ever had. OK, I know I have a relatively easy life, but still, it was hard. First off Bea (21 months) was sick, so I had her in bed with me. I awoke to her swigging from a paracetamol bottle (my fault, obviously, please don’t feel the need point that out – I obviously didn’t screw the lid on properly at 2.30am that morning), so we rushed her to A&E as she’d ingested about half a bottle. She was fine. Next, I reversed my car into a freight container thing, and basically wrote it off. Then Artie (just 4) split his head open on a slide (again, my fault, I stupidly was stood at the bottom waiting for him to go through my legs – he’s too tall – and he crashed into me at high speed, slamming back onto the metal). Another visit to A&E ensued. Then he was sick all night. Another visit. That’s 3 times in 1 week! At least now I am familiar with Sheffield A&E, which is 40 minutes away to add to the stress of it all.
During all of this extreme stress, all of us were really feeling crappy with a nasty virus, probably why Artie was sick rather than anything to do with the head injury. And my IBS (or what I think is IBS, currently TBC my the docs) went crazy, presumably spurred on by all the crying – I lost about 7 litres of water through my eyes this week in non-stop, self pitying tears!
God, being a parent is hard. When is it going to get easier??? Seriously, when? I want to know. Answers by email please!
Anyway. Today, the sun is shining. Bea slept through last night. My mum has the kids. I’ve been for a run. I’ve already hoovered and cleaned the bathroom. So, yeah, I’m feeling pretty good. (I seriously hope that I am not tempting fate to send me another bombshell by saying that)
What I am craving now is simplicity. I am not very good at keeping things simple. I ALWAYS take on too much (“I’m just going to make a birthday cake for Artie, no really, it’s dead easy!” even though I was on my knees with exhaustion – I had an icing disaster and was on the verge of tears for the 78th time in a week).
But I am determined in my new simple outlook. And at the forefront of this focus is food. This blog is definitely about easy, achievable family food. But now I want it to be even more simple. This salad was something I knocked up yesterday and it was very easy, very nice, therefore very blog-able. It’s Spanish in style, and would be great for a little lunch with friends or for kids too if they will eat salad leaves (if not they will enjoy the crispy sausage and chick peas).

Serves: 1 (increase for however many you wish to feed)
Prep time: 2 minutes
Cook time: 5 minutes
Total time: 7 minutes
Mixed salad leaves (I used watercress, rocket and baby spinach)
100g of cooking chorizo
About 8 plum tomatoes
Half a tin of chick peas
Juice half a lemon
Handful of fresh flat leaf parsley, chopped
2 tablespoons of extra virgin olive oil
- Chop your chorizo into fat coins. Frazzle off in a pan for about 5 minutes.
- Halve tomatoes. Drain chick peas. Empty salad on plate.
- Throw chorizo fat (or add a little to dressing if you like). Assemble all your ingredients in a bowl.
- Squeeze lemon and drizzle oil over. Add salt and chopped parsley.
- Toss, and enjoy.
