‘Tropical’ breakfast smoothie

I don’t have a smoothie on here yet, which is ridiculous really, especially as I am really, seriously getting into them right now! In fact, today I officially got serious about them, as my Nutribullet Pro arrived! They are supposed to be great for whizzing up tricky things like kale and so on, but this smoothie is easy in any blender as the ingredients are all things that are soft and go very smooth and creamy.

I made a conscious effort to make something that was actually delicious, in the hope that my kids would enjoy it. See, recently I have been really into the whole healthy food vibe – Deliciously Ella, Hemsley and Hemsley – check them out if you’re not already hooked. I love their delicious foods and all these new ingredients are a joy to play around with. But I don’t always get it right. The other day I made a hideous porridge that looked and tasted like frog spawn!

This smoothie is so tasty – the kids devoured it. Smoothies are a great way to get some goodness crammed into your day first thing, especially if your kids are fussy or struggle to eat certain things. For example, my daughter won’t eat avocados – but she loved this. My son won’t eat bananas – ditto. So it made me very smiley when they both downed a glass and asked for more!

Try it in your everyday blender!

Serves: 4 people 
Prep time: 3 minutes

Ingredients: 
1 avocado
2 bananas
1 mango
200ml coconut milk
200ml orange juice (or more / less, depending on how thick you like it!)
1 tablespoon of coconut oil

Instructions: 

  1. Simply whizz in the blender until smooth and enjoy straight away!

    My daughter is severly allergic to dairy and eggs along with having coeliacs. I love both these food writers/cooks. I often freeze the smoothies to make a sorbet for my daughter as she isn't overly keen on many ingredients (particularly coconut and avocado) that goes into them but as a sorbet she will happily eat them.
