Haddock spinach and sweetcorn pie with cheesy mash topping

How’re ya? I am WELL. Super well, actually. Mainly down to the fact that I am having life coaching. (It’s OK, you’re allowed to do an eye roll… I don’t mind, in fact I may have done that too a few years ago at the mention of someone having life coaching)… previously, probably like most people, I thought life coaching sounded a bit… I don’t know… maybe self-indulgent, possibly airy fairy?! But it’s actually the best investment I have EVER made in myself. I saw that a blogger acquaintance had been having some sessions, found them really helpful, and thought, hmmm, I’d probably benefit from some of that actually. But then forgot about it. Then, serendipitously, a new mum arrived at school who happened to be offering a new type of coaching through the organisation One of Many, and asked me if I wanted to try it. I said yes OK, thinking it would help me decide on a few work related things and not much more. But it’s really changing my perspective on so many things. My relationship, my kids, my work, my health, my outlook, my connection to the world… It’s helping me to be happier, in a nutshell. It’s like a weekly check in with myself and I love it so much! I want to tell you SO much more about this – and I will be doing in a vlog most likely – when my 12 week sessions come to a close. I’m on week 9 and I just thought I’d mention it. So watch out for that if it sounds vaguely interesting to you!

Anyhoo…

This *points to image above* was supposed to be a bog standard fish pie for dinner last week, but the salmon smelled a bit iffy so I chucked it. Being therefore short of some filling I lobbed (technical term) some frozen sweetcorn and some almost on the turn spinach in too. It was really yummy – and the kids enjoyed it, even if they left most of the ‘green bits’. Adding cheese into the mash topping rather than just on top is a really nice touch and makes for a richer, more golden topping.

You could add hard boiled eggs, prawns or peas – change it up with whatever your littlies like!

Makes: enough for 4-6 people

Takes: Just over an hour

Ingredients:

  • 1 large fillet of  smoked haddock (undyed is best)
  • 900g red skinned potatoes
  • Handful of frozen sweetcorn (or tinned)
  • Large handful of spinach
  • About a pint of milk
  • 50g butter
  • 50g flour
  • Salt and pepper
  • Nutmeg
  • About 100g cheddar cheese
  • Butter, for mash

Instructions:

  1. Peel potatoes, chop into same size (ish) pieces and pop on to boil. Mash with butter and add cheese and seasoning.
  2. Preheat oven to 180C.
  3. Melt butter in a pan and add flour, gradually add milk. Bring to boil to thicken, stirring continuously. Add nutmeg and seasoning. Add spinach and stir in off heat to wilt.
  4. Chop up haddock into chunks. Add to large baking dish. Sprinkle over sweetcorn and add white sauce with spinach. GIve it a stir.
  5. Top with cheesy mash and bake for about 30 mins, until brown.
  6. Serve as is – on its own which is how we had it – or with carrots, or broccoli.
